Diabetes-friendly recipes: Hummus or guacamole roll-ups

Try these easy-to-make hummus or guacamole roll-ups to have snacks available anytime!

GUACAMOLE ROLL-UPS

Ingredients:

  • 4 whole-wheat tortillas
  • 1 cup Simple Truth traditional guacamole, 1/4 cup per tortilla
  • 3 to 4 pieces sliced turkey or ham
  • Shredded lettuce
  • 3 to 4 Roma tomatoes, diced
  • Shredded low-fat cheese, optional

Nutrition information for eight roll-ups: 13 g fat; about 37 g carbohydrates; 34 g protein. (For serving size of 3 to 4 roll-ups: about 7 g fat; about 19 g carbohydrates; 17 g protein.)

HUMMUS ROLL-UPS

Ingredients:

  • 2 to 4 whole-wheat tortillas (depending on how much you want to make)
  • 1 cup hummus, 1/4 cup per tortilla
  • 1 cup baby spinach
  • 1 red bell pepper, cut in long pieces (julienne style)
  • 2 to 4 tablespoons cucumber, cut into circular pieces
  • 2 to 4 tablespoons shredded carrots, optional
  • Shredded low-fat cheese, optional

Nutrition information per serving (3 to 4 slices of the roll-ups): 1.1 g fat; about 10 g carbohydrates; 1.2 g protein.

Directions for both:

Lay tortillas flat on countertop. Spread either the guacamole or hummus evenly across entire tortilla. Top with desired ingredients. Roll tortilla as tightly as possible. Cut into 8 equal circular pieces. Store in the refrigerator to let chill, or eat right away.
